Gday Mark, sure here it is, a mate got it off a WA fish forum. I also add diced potato at the start.
CURRIED TAILOR
Ingredients:
750g Tailor fillets, skinned and cut into bite sized pieces
2 Apples, peeled, cored and chopped
1 medium Onion, diced
3 tspns Curry powder
125g Butter
1 cup Dry white wine
1 tspn Salt
1/2 cup Whipping cream
2 tspns Cornflour
1/2 cup Sultanas
Method:
1. Heat half of the butter in fry pan or wok. Add apple and onion, sprinkle with half the curry powder and saute over medium heat until the onion is transparent
2. Add wine, cream and remainder of butter and stir. Then add cornflour and continue to stir to thicken slightly
3. Introduce the fish and the rest of the curry powder. Simmer over medium heat until the fish is cooked (approx 8-10 minutes)
4. In the last minute, stir in the sultanas Serve with rice
